
Simple & Delicious Gluten Free Banana Chocolate Chip Blender Muffins
These gluten-free muffins are really tasty and so easy to make. They have one of my favorite gluten-free nutrient dense bases, buckwheat groats.

Simple & Delicious Chocolate Chip Banana Buckwheat Blender Muffins
Ingredients
- 1 Cup Buckwheat Groats
- 1 Cup Plant Milk
- 2 Spotty Ripe Bananas
- 1/2 Cup Vegan Chocolate Chips
- 1/2 Cup Maple Syrup
- 2 Tbsp. Flax Meal
- 1 Tbsp. Apple Cider Vinegar
- 1 Tbsp. Coconut Oil
- 1 Tsp. Baking Soda
- 1/4 Tsp. Himalayan Pink Salt or Sea Salt
Instructions
- Preheat oven to 350. Blend all ingredients (except chocolate chips) in a high-speed blender until smooth. Mix in chocolate chips by hand, pour batter into parchment cups (not necessary but helpful) in a muffin pan, each cup should be about 3/4 full. Sprinkle a few extra chocolate chips on top of you desire. Bake for 20 minutes. Let cool, serve, and enjoy. Store in an airtight container. I highly recommend using organic ingredients, whenever possible.
