Pumpkin Granola Recipe
I have so much fun whipping up all things pumpkin this time of year. This pumpkin granola is healthy, crunchy, sweet and the perfect way to get your pumpkin fix in this season. Eat it as cereal, as a topping for a smoothie bowl, yogurt or fruit. I promise this nutrient-dense granola will not disappoint!
Pumpkin is loaded with protective antioxidants that support wellness, promote healthy skin and are also linked with boosting immunity making adding this seasonal favorite to your diet an optimal choice.
Pumpkin granola recipe
3 cups oats
1 cup walnuts
1/2 cup pumpkin seeds
1/4 cup chia seeds
1/2 tsp. pink Himalayan salt
1 tsp cinnamon
1/2 tsp nutmeg
1/2 c. Maple syrup
1/4 c. Coconut oil
1/3 c pumpkin purée
Put all dry ingredients in mixing bowl and mix thoroughly with your hands, add in wet ingredients and continue to mix until well coated. Put granola mix on a parchment paper-covered baking sheet. Bake at 350 for 35 min stirring occasionally. Cool for 20 minutes and enjoy. Store in an airtight container.
