The Best Healthy Pancake Recipe

Anyone else struggle to get their kids to eat all the healthy greens? Today I’m back with another sneaky mama hack I have for getting my kids to eat more of them.

Leafy greens are filled with wellness supporting vitamins, minerals, and nutrients that help strengthen little growing bodies and support a healthy immune system. They are such an important addition to a well-rounded diet that supports overall wellness.

These yummy plant-based buckwheat pancakes are healthy and so damn good. My kids clear their plates EVERY single time I serve them and my husband said he’d eat them every day if he could. I’ve tried it all when it comes to getting them to eat more greens and these yummy pancakes have become the path of least resistance.

I think you will be pleasantly surprised by how delicious these “green” pancakes are! They are dairy free, gluten free and plant based. I highly encourage you to give this delicious recipe a try!

Healthy “Green” Pancake Recipe

1/2 c. Buckwheat

1 banana

1/4 c. Raw pumpkin seeds

2 tbsp. Chia seeds

2 dates

1 1/4 c. Plant milk

1/2 tsp cinnamon

Large handful of spinach or power greens

Blend all ingredients in a high-speed blender until smooth. Pour 1/2 ladle of batter into hot oiled pan. I recommend avocado oil for its high smoke point. Cook till tops are bubbling and edges are brown then flip and cook until bottoms are brown. Top with your favorite healthy toppings and enjoy!
